Pumpkin Bread – A Fall Favorite!
As fall gets closer, I’m getting all the pumpkin feels 🙂 This is one of our fall favorites- an original Mom recipe that I now make throughout the autumn season! Mmm just thinking about fall gets me so excited for all the pumpkin deliciousness!
When the fall leaves start changing color and the nights start cooling down, we LOVE to begin our Autumn baking traditions. I absolutely love PUMPKIN everything-pumpkin muffins, pumpkin bread, pumpkin bagels, pumpkin butter, pumpkin soup and even pumpkin yogurt. so this year I decided to try my hand at modifying my favorite pumpkin bread recipe to make a healthier version. I will include the regular recipe first and then the modified version.Enjoy!
Classic Pumpkin Bread
1 3/4 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 cup butter (I use canola oil)
1 cup sugar
1/2 teaspoon vanilla
2 eggs
1 cup canned pumpkin
1/2 cup chopped walnuts
1 cup mini chocolate chips (for a real treat!)
Mix all dry ingredients in a medium bowl and set aside. Cream butter (oil) and sugar and add vanilla. Mix eggs and pumpkin and add alternately with dry ingredients to the creamed mixture. Stir in walnuts and chocolate chips (if desired). Pour into a greased loaf pan and bake in a 350 degree oven for 1 hour or until done.
Tricks to a Healthy Pumpkin Bread Treat
1 cup whole wheat flour (use gluten free if needed)
3/4 cup oat flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon ground cloves
1 teaspoon ginger
1/2 cup coconut oil
1 cup coconut sugar
1 teaspoon vanilla
2 eggs
1 cup organic canned pumpkin
1/2 cup chopped walnuts
