PB Banana Cookies
In honor of my friend who just had a baby who loves these cookies…
3 ripe bananas, mashed
1 tablespoon vanilla
¾ cup natural chunky peanut butter
2 tablespoons maple syrup (sugar free for clean eating)
1 tablespoon honey
2 cups old fashioned oats
½ cup flour (white or whole wheat) (use whole wheat or oat flour with clean eating)
1 teaspoon cinnamon
1 teaspoon baking powder
¼ teaspoon salt
½ cup non-dairy chocolate chips (carob chips for clean eating)
Preheat oven to 350 degrees
Mash bananas so they are mostly broken up. Mix bananas, vanilla, peanut butter honey and maple syrup into creamy consistency in a large bowl.
In another bowl, combine oats, flour, baking powder, cinnamon, and salt
Add the dry ingredients to the wet ingredients and stir until they are well combined -the batter should be slightly sticky
Scoop cookies into tablespoon-sized balls and place onto an ungreased baking sheet
Bake for 15-18 minutes
