Blonde Brownies
I love to bake. Growing up, we always had baked goods ready for guests and parties. Besides the famous “Weisser Cookies”, blonde brownies were the other favorite from the renowned Baby Bear Stew Cookbook. (Baby Bear Stew will be sold here soon). But for now, we will let you in on a Baby Bear Stew specialty. So here is another one of the family favorites.
Blonde Brownies
Ingredients:
2/3 cup melted margarine
2 1/4 cup brown sugar
3 eggs
2 3/4 cup flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup chopped nuts (optional
1 1/2 cup chocolate chips
Directions:
1. Grease a 9×13 pan and preheat the oven to 350 degrees.
2. Melt the butter
3. Mix the melted butter with the brown sugar
4. Add the eggs
5. Sift dry ingredients and add. Stir until well blended
6. Add the chocolate chips and nuts.
7. Bake for 25-30 minutes. Cut into squares like brownies.

I love having sisters and being able to share interesting and encouraging things with each other. Yesterday, Jess sent us a text of a photo with a few verses that were such a great reminder of how our Heavenly Father cares for us!

Did you know that you are favored? “Charis” is a Hebrew word that means blessed, favored, graced……I was challenged yesterday to remember when I first realized that I am blessed, loved and favored by God. God is desirous of drawing us into a relationship in which He can bless us with His everlasting love. Our faith opens up the blessings that flow into our lives from God. We are blessed to be a blessing. We have been blessed because we are loved by God and we have the privilege to share what God has given to us.
My favor is not earned, it is a free gift that is available to all through belief. In the Old Testament, faith in the one true God, Yahweh, deemed a man as righteous, and in the New Testament it is faith is Jesus Christ as the Son of God and Savior of all mankind. I must remember that my belief and faith is proven by my obedience.I show my trust in God by consistent obedience. Delayed obedience is actually disobedience. So my challenge is to show my true faith by trusting in God’s plan for my life in every situation, in every relationship, in every trial and especially when I am waiting. A life of faith is a process. We conquer one challenge only to find another opportunity to wait and trust right on the heals of the last one. My character is refined and strengthened as I wait on God and I must not panic when the process seems longer than I expect or harder than I feel equipped to handle.

I like to fill my time with lots of activities to get us out of the house and tire out the kids. Although a busy schedule does yield fairly consistent naps and tired kids, it also leads to a tired mommy and little spare time to just enjoy each other.
Today I decided not to schedule anything and to just take it easy with the girls. We didn’t rush to breakfast – I let the girls play with each other for a while and we read books until they asked to eat. We didn’t rush to finish breakfast – We took our time and once they were done I let them watch a show while I actually cleaned up!! We had no time frame, so although we did go out to run one errand, I had time to treat them to a little snack after our shopping for their good behavior.
I’m not going to say that this was an easy day. Actually, it was pretty tough. Ellie did not nap at all and decided when I asked her to do things that she would reply, “No, I disobey.” It wasn’t pretty. However, I did really enjoy watching the girls interact with each other and had fun joining in their play time.
I still like my busy days and activities that get us out of the house, but I realized how important it is to balance the busy days and the slow days.
Every time I’m out with the girls someone has to come up and tell me this time when they are little goes by fast.
So let’s try and take the time together to really cherish our kids with no agenda and no schedule. (At least every once in a while!).

This week, my mom and I are hosting a party where kids will be present! We wanted to find a healthy recipe for a morning snack that the children would especially enjoy! Not only are these muffins healthy (no flour, oil , butter or sugar!!), but they are the perfect size for a little snack. I found this recipe from Spokane Dinner Club and adapted it to become the Gluten Free Pumpkin Mini Muffins!
2 1/2 Cups of Oats
1 Cup Plain Non-Fat Greek Yogurt
1/2 Cup Honey
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 Cup Canned Pumpkin
1 TBS Homemade Pumpkin Pie Spice (Also used in our Pumpkin Cinnamon Rolls)
– 2 tbsp. ground cinnamon
– 1 tbsp. ground ginger
– 1 tsp. ground allspice
– 1 tsp. ground cloves
– ¾ tsp. ground nutmeg
(Optional) Mini Chocolate Chips, Raisins, Walnuts
DIRECTIONS: [Makes 45 Mini Muffins]
1. Preheat oven to 400 degrees. Spray muffin tins with cooking spray.
2. Combine the Oats, Baking Powder, Baking Soda, and Pumpkin Pie Spice in a mixing bowl. Combine all other ingredients in a blender. Mix together and add the oat mixture 1/2 a cup at a time. If you are using any other mix-ins, you can either stir them in after all other ingredients are blended together or sprinkle them on top of the batter in the muffin tin.
3. Divide batter into the prepared muffin tins and bake for 15 minutes.

When my girls were little, spending time with their Grammies was a priority. Both Grammies lived near each other and over the years after my husband and I got married, they had become very close friends. The girls loved their visits. The Grammie visits were full of creative activities, discovering worlds of adventure while reading books and laughing a lot while playing make-believe. When it was time for them to leave, we would have to get our calendars out and schedule their next visit. For the first 15 years of our marriage, our family lived far away from the Grammies and now we are privileged to only live an hour away. One of the Grammies had a tradition she started with the girls when they were little. As she hugged them good-bye, she would tell them to keep her in their pocket. “Put me in your pocket”, she would say as she gave them their final hug. This way she would stay close to their heart. It was her way of showing them how much she loved them and it gave them security to know that they were precious to her. She has started a legacy of love that is being passed down to her great grandchildren and is being shared with her grand sons-in-law.
Being a Gammie (my grandkids’ name for me) is one of the greatest privileges of my life. I am grateful for every opportunity I have to spend time with each one of my grandchildren. I dream of the day that I can live close enough to the grandkids to be able to have them over to my house on a regular basis, but for now I am content to enjoy my visits to see them at their homes in southern California.

There are numerous ways to cut a watermelon. But after buying an enormous amount of watermelon the past few years (it has become a new obsession) I have found a way to slice pieces effectively and efficiently. So I wanted to pass on this new wisdom.
First, a few tips on picking a watermelon. You want to find one that looks fairly symmetrical with one yellow spot. When you pick the watermelon up, it should feel heavy. If you knock on it, it should make a hollow sound. Depending on when you are going to eat the watermelon, look to see if there are some brown markings on the outside. If there are brown scratch like marks, that means the sugar is set and it is ready to eat. If you want to wait for a few days, try to find one without scratches.
Now, to cut the watermelon.
1. Cut the watermelon in half.
2. Depending on how much of the watermelon you want to cut, you can cut one half and saran wrap the other. Stick the saran wrapped half in the refrigerator.
3. Cut the half into thirds. You can see the lines on the watermelon where it is best to cut.
4. If you want to cut slices, take the third and cut it in half, then cut into slices pieces with rind.
5. If you want to cut it into small pieces without the rind, take each third and cut separately. Cut along the rind as you see in the picture below.
6. Turn it to the side, cut at the bottom of the fruit on each side.
7. Then cut along the third as show below.
8. Cut the opposite direction.

This past weekend my sister invited me to attend her church’s annual women’s retreat. It was a wonderful weekend of encouragement and fellowship. If you have never been on a women’s retreat before I highly recommend it!
I wanted to share a few of my favorite tidbits of encouragement from the speaker, Margaret Ashmore.
The main idea of the weekend was that the joy of our salvation should be on our hearts every day. Margaret said, “the more I have of Jesus on the inside, the less I need on the outside.” We are driven by so many needs: the need for acceptance, unconditional love, and security. Nothing in this world can satisfy these needs, only God can meet our needs!
C.S. Lewis once said, “To what will you look for help if you will not look to that which is stronger than yourself?” We must let our needs drive us to God because only he can satisfy the desires of our heart.
The only way to have more of Jesus on the inside is to spend time with him through prayer, devotions, and quiet times of waiting and listening for his voice. This is the main point I took away from the weekend. I have made a new goal to start every day with Jesus so that no matter what I encounter, I know that he is with me guiding my steps.
I hope that you feel encouraged by these tidbits. I would also challenge you to make time every day for Jesus. Start there. Make the time for him and he will find you!

Father’s Day is coming up in a few days! Obviously many of us will spend the day celebrating our dads, but I also can’t help but think about my Heavenly Father.
Your Heavenly Father cherishes you as his child. You are a child of the King. Actually, he absolutely adores you. He chose you. He loves you with an unconditional and everlasting love. Think about that. Take it all in. Let it resonate in your heart and soul. You are loved, cherished, treasured, and chosen by the Savior. What an amazing privilege.
But the question I ask myself is, Do I really live believing this? Do I really let it all sink in? I think if I really let myself realize the intensity of God’s love, I might live a little more confidently in who Christ is in me. Too often it is an afterthought or a forced thing. But I want it to be a natural overflow. Your Abba Father wants to do life with you. He wants you, He loves you, and He has a purpose for you. I need to spend time getting to know the character of my God. Just like any relationship, it takes time and investment. So the more I can just be with God, the more I will know him. It isn’t a formula or a certain number of times to pray or a certain chapter in the Bible. It is relationship. It is knowing a Father. And it is living in child like faith and humility of the God we serve. So the more I get to know Christ, the more I will know His love, and the more His love will flow out of me.
