No Recipe Dinner
Our family has tried to implement at least 1 or 2 “no recipe” dinners each week. For us, this means a dinner that requires minimal ingredients and is fast and easy to make from memory, no recipe required!
Currently, our go-to recipe is a delicious egg, meat and potato scramble invented by my husband. This recipe is fun, especially if you like the occasional breakfast for dinner, and only requires a few ingredients.
Egg, Meat and Potato Scramble
feeds 4, or 2 with leftovers for lunch the next day.
Ingredients:
1/2-3/4 cup Olive Oil
2 Russet potatoes
1 sweet onion
7-8 Eggs
Your choice of breakfast meat (We usually use bacon or chicken apple sausage)
Cut potatoes into 1/2 inch cubes. Dice onion. Heat oil in a large sauce pan. Add potatoes and onion and cover.
Cook for 15-20 minutes stirring occasionally. Potatoes are done when they are soft and lightly browned. While the potatoes are cooking cut up your meat into cubes. Drain potatoes in a colander and let sit. Return the pan to the heat and add meat. Cook the meat until just done. Add the potatoes back to the pan. Whisk the eggs and pour over the meat and potatoes.
Cook and stir until eggs are at your desired consistency. Serve, eat and enjoy!
