Ingredients
1 TBS Yeast
1 1/4 Warm Water
1 tsp Sugar
1 tsp Salt
1/4 cup Honey
3 1/2-4 cups Whole Wheat Flour
Makes approx 20 pita pockets!
Pour the yeast in to a medium size mixing bowl. Add the warm water and the sugar (acts as “food” for the yeast). Set aside until the mixture is quite bubbly (approx 10-20 minutes).
Add the salt, honey, and 1 1/2 cups of whole wheat flour to the yeast mixture, then stir. Add the remaining 2 cups of whole wheat flour and stir. When the ingredients are mixed together, knead until the dough is smooth. If the dough is still pretty sticky, add a minimal amount of flour and continue to knead.
Separate the dough into rolled balls and place on a plate. Then, roll out each dough ball to 1/4 inch thick. Try to keep the thickness of the dough even so that it “puffs” to its optimal potential. Leave the flour rounds on a floured surface or foil or parchment paper for 20-30 minutes.
Once they are slightly puffed, flip the flour rounds and place on a baking sheet. Put the sheet in a 400-425 degree oven. Bake for 10-15 minutes. Make sure to stick around – You won’t want to miss the magic happening in your oven! The rounds will slowly start to puff and make the pita pocket! Remove the sheet from the oven when slightly browned or a little after that if you want a little crisp to your pitas! ENJOY!! 🙂
