A couple weeks ago, a friend invited me and my husband over for dinner! It was so delicious, and it was such a simple recipe. It consisted of chicken, taco seasoning and salsa in the crock pot. This inspired me to take this recipe a little further. First thing on my list was to find a recipe for a homemade taco seasoning! I have never been one to buy taco seasoning, but I knew that if I was going to use it in a recipe, I wanted to make it and not buy it. Store bought taco seasoning can have a lot of extra salt in it, as well as added fillers used in processed foods! Yuck! After a little research, I found one that sounded great!

Ingredients:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
Makes approx 2 3/4 TBS
Directions:
Mix all ingredients together! 🙂
Store in an airtight container! This is a small salsa jar that I reused!
I have now adapted my friend’s dinner recipe with the homemade taco seasoning and additional veggies, and has become one of our favorite meals! Throw chicken breast (2-3), corn (15 oz can or fresh if possible), and peppers (1-2 cups of frozen or 1-2 fresh) [Optional: Add black beans or kidney beans!] and top with your homemade taco seasoning and salsa (about 8-12 oz) in the crock pot! Cook on HIGH for approx 3-4 hours. Shred chicken and mix back in to crock pot. Put the taco chicken on top of a bowl of lettuce to make a big mexican salad and/or put the mix inside whole wheat tortillas (Toast with muenster cheese on top prior to adding your chicken taco mix if you want this meal to be even more delicious!)!
