Harvest Apple Crisp
Apples, apples, apples…..crunchy, flavorful, tart, sweet, Fuji, Honey Crisp, Pink Lady, Golden Delicious, Pippin, Jazz……so many choices, such a versatile fall fruit. You can slice them, dice, them, bake them, make pies, muffins, cakes. One of my all time favorite recipes to make with apples is old fashioned apple crisp. I will give you the original recipe and them suggest a few healthier options in bold
Ingredients
10 green apples (granny smith and golden delicious)
⅛ cup water
⅛ cup lemon juice
1 ½ cups brown sugar (2 TBS white sugar, ½ cup brown sugar and ½ cup coconut sugar)
2 cups oats
1 ½ cups flour (½ cup oat flour and ¾ cup wheat flour and ¼ cup flax)
2 Tablespoons cinnamon
1 ½ cups butter (1 stick butter and ½ cup coconut oil)
Peel and thinly slice apples and place in a large bowl and pour lemon juice and water over them. Sprinkle with 2 Tablespoons sugar, stir and place into a 9×13 glass pan. (I used a 10 inch round deep dish pan and a 5×8 loaf pan because I was making this for two parties. Mix flour, remaining sugar, oats and cinnamon in a medium bowl. Cut in butter (and coconut oil) until mixture is crumbly. Sprinkle over apples. Bake in a 375 degree oven for 1 hour. This is delicious served with vanilla ice cream.
