Gluten Free Fresh Apple Oat Muffins
Testing muffin recipes has been a hobby of mine since I was in high school and won a Sunset Magazine recipe contest for my Pink Pastry Bran Muffin recipe. Now that there is a craze for gluten free baked goods, I have been trying to create a moist, healthy, gluten free apple muffin.

Ingredients
1 1/4 cup unsweetened apple sauce
2 apples
1 Tablespoon vanilla
1 cup plain greek yogurt
2 eggs
1/2 cup coconut oil
1/2-3/4 cup brown sugar or honey
2 cups oats
1 1/2 cups oat flour
1/2 cup oatbran
2 teaspoons baking soda
4 teaspoons baking powder
1/2 tsp nutmeg
1/2 teaspoon ginger
1 Tablespoons cinnamon
1 cup chopped walnuts
1/2 cup raisins, chopped dates or chopped dried apricots (optional)
Peel, core and chop the apples. Place them in a 2 cup microwave proof measuring cup and add 2 Tablespoons water. Cook in microwave on high for 2 minutes to soften apples. Drain and set aside to cool. In a large bowl, mix all dry ingredients including brown sugar. In a smaller bowl mix all wet ingredients and stir to combine. Pour wet ingredients into dry and mix just enough to combine. Add the cooked, cooled apples, walnuts and any of the dried fruit and fold into muffin dough. Spray muffin tin or use paper muffin cups and fill 3/4 of the way up. Bake in a 350 degree oven for 20 minutes. Makes 18-20 muffins.
