Turkey Loaf Minis

A fun adaptation of a family favorite.
Ingredients
  • 1 pound ground turkey
  • 1 egg
  • ½ cup oats
  • 1 small onion chopped fine
  • ⅓ cup broth or milk
  • ¼ cup parsley chopped fine
  • ½-1 teaspoon salt
  • Glaze
  • ⅓ cup organic ketchup
  • 1-2 Tablespoons brown sugar
  • 2 teaspoons dijon mustard or regular yellow mustard
Instructions
  1. Mix all meat loaf ingredients together in a medium sized bowl until mixture is all blended.
  2. Line a jelly roll pan with aluminum foil.
  3. Shape meat mixture into mini loaves and place on cookie sheet. (For a fun party idea-you can also grease a muffin tin and fill with the meat mixture to make mini turkey loaf cupcakes.)
  4. Combine glaze ingredients in a small bowl and mix until blended.
  5. Spread a generous amount of glaze on each mini loaf.
  6. Place in a preheated 350 degree oven and bake for 45 minutes.
  7. Whip up a batch of your favorite mashed potatoes and make a big salad and you have a delicious and very nutritious meal.
