Apricot Crumble
Fresh apricots make a scrumptious sweet and tangy base for a summer cobbler. We like ours with an oat crumble granola-like topping. Using coconut oil, coconut flour and coconut sugar in the topping keeps this dessert delicious but adds a healthy dimension. Serve with vanilla ice cream or frozen yogurt for a fabulous festive dessert.

Tortilla Stack…A Delicious Crock Pot Recipe!
I have tried many new recipes since moving to Grenada, but I think the Tortilla Stack recipe has become one of our favorites! The process is a bit more time consuming than some throw-all-ingredients-into-crock-pot and turn it on to the correct heat and time recipes. However, it is so worth the extra time!!! It is like a Mexican lasagna, with stacked layers, that gives a delicious enchilada taste and a healthy option for dinner! Tortilla Stack is also a great recipe to use Bekah’s Whole Wheat Tortillas! Ok, let’s get to it!

Mexican Quinoa Salad
Quinoa is a superfood grain that is high in fiber and high in protein. It cooks up like rice, has a consistency similar to couscous and a mild flavor. It is the perfect base for healthy salads or can be added to any green salad to increase the protein content. It can be used as the base for pilaf or other side dishes that call for rice or bulgur wheat.

Food for Mommy’s Day
Food for mother’s day… What is something everyone can do… How can we help those families, those kids, and the dads help to honor the moms in their life. As I was thinking of how to celebrate mother’s day for all the mother’s I know in my life, I remembered the time I asked a friend to a dance in high school. I went to a local pizza place and asked if I could personally decorate a pizza and send it to a friend. So I took some of the toppings and wrote on the pizza “Sadies?” and had the pizza delivered to my friends front door. So I thought, why not do the same thing to celebrate mother’s day?? Of course, now I can actually make a pizza on my own and deliver it myself. But you can do it with lots of different things… pizza, pancakes, cookies, sandwiches, and snacks. You can make a shape, write mom, spell out I love you. You can get your kids to help, your friends to help, and share the love of the celebration.

As I have mentioned before, it is not always easy to find the healthiest options of food in Grenada. One of these “hard to find healthy options” has been tortillas. They do have them in the store (which we were pleasantly surprised about in the beginning), however, they only have a white flour option. I love whole wheat tortillas, but I was willing to make a sacrifice for the first few months we were in Grenada. When we arrived back to the island after our quick Christmas break, a friend mentioned that she was planning to make her own tortillas. As soon as she started telling me how easy it was, I wondered why I had never considered that! I went right home and started scouring Pinterest for a good recipe! My husband would choose white tortillas over wheat 9 times out of 10 until I found this recipe to make my own whole wheat tortillas from Bran Appetit- Now, he says my tortillas are the best wheat tortillas he has ever had! 😀

Smoothies are a popular and trendy snack, sometimes a meal replacement and once in awhile an opportunity to sneak every conceivable healthy nutrient into a power packed breakfast for a hard working husband. I am not sure when our ritual began but our morning smoothies have become our “empty nesters” breakfast of champions. They have evolved from delicious and refreshing fruit drinks to our current “as long as my drink does not look GREEN you can put anything in it that is good for me” and that is how our creative healthy smoothie tradition began. I usually create as I go each morning but since I am trying to teach my girls and now you, as our followers, the “HOW TO” behind my creations, I decided to actually measure everything this morning. As I was carefully measuring out the first ingredient, the Acai juice, the carton tipped a bit and as I reached for it, I spilled Acai juice all over the kitchen, down the cupboards, on my feet and all over the floor. After I cleaned up the mess I proceeded to complete the measuring of each ingredient and here is the result….I use a Vitamix but a heavy duty blender will work as well.
This recipe makes 4 cups (enough for 2-3 people depending on serving size) so adjust according to your need.
