Gluten Free Fresh Apple Oat Muffins

Testing muffin recipes has been a hobby of mine since I was in high school and won a Sunset Magazine recipe contest for my Pink Pastry Bran Muffin recipe. Now that there is a craze for gluten free baked goods, I have been trying to create a moist, healthy, gluten free apple muffin.…

Homemade Taco Seasoning

A couple weeks ago, a friend invited me and my husband over for dinner! It was so delicious, and it was such a simple recipe. It consisted of chicken, taco seasoning and salsa in the crock pot. This inspired me to take this recipe a little further. First thing on my list was to find a recipe for a homemade taco seasoning!

Kidney Bean Caramelized Onion Veggie Burgers

This recipe was served at a potluck in Grenada and the friend who made them was gracious enough to share his recipe. As much as I loved the mini burgers he made for us that night, I altered the recipe and liked them even more. I served them on a Friday night with oven fries and my husband could not believe they were veggie burgers. …

Apricot Jam-No Sugar Added

I absolutely LOVE to make homemade jam. But with this Anti-Inflamation diet that I am trying to stick to in order to help heal my back, I have not been eating jam because even the low sugar variety I make has quite a bit of added white sugar. So my precious friend and prayer partner gave me this wonderful recipe for Apricot Jam-No Sugar Added.…

The “I’m Never Hungry For Dinner” Kind of Salsa

Chips and salsa… weakness. A good salsa is the perfect way to start a meal. But some of the meals just want to end with chips and salsa, because I just can’t stop eating them. You can find the original recipe here.

The heart of the recipe is the creamy Greek yogurt. I personally do not like yogurt, so I tried to think of an alternative that could keep the consistency and flavor of yogurt. I decided to try the recipe with hummus.

Curried Chick Pea and Chicken Slow Cooker Stew

While I was visiting Bekah and Ashkon in Grenada we had the opportunity to experience food from many different cultures. My favorite was the Indian food we enjoyed one day for lunch made by a local family that sells delicious meals every day on the campus at SGU (St. George’s University). Bekah found a recipe that reminded us of those delicious lunches and I added extra vegetables and changed the spice mix to make it my own. Hope you enjoy this meal as much as my hubby and I did!

Healthy Baked Oatmeal Muffins

A friend and I are in a very similar life situation right now – We are newly married, soon after the wedding we moved to a foreign country, and now we have lost our husbands to the “Dreaded 4th Term of SGU.” Needless to say, in just the first few weeks of 4th term, we already rarely see our husbands, and it will most likely only get worse. Our solution: Cook and Bake together to keep each other from missing our husbands too much! And, then in return, we get happier husbands with full tummies from our dinners and fun sweet treats! We had our first day and boy was it a success. We took a delicious-sounding recipe that another friend had given us and made it even better!

A summer BBQ is a wonderful opportunity to experiment with new recipes. I took a variation of our family favorite Salsa recipe and added some barbequed corn and a can of black beans and turned our salsa recipe into a delicious and refreshing salad. This is a great dish to take to a summer potluck.
