The Brave Little Toaster Oven

I do not have an oven. Yep, believe it! I live on the island of Grenada, on the campus of St. George’s University Medical School, and we do not have an oven. You can imagine that it makes cooking a little difficult! But…we do have a TOASTER OVEN!! (And yes we packed it in our carry-on and brought it with us!! One of the best decisions we made for this move!)…

Contentment

Hebrews 13:14 “For this world is not our home; we are looking forward to our city in heaven, which is yet to come.”

This last term, I caught myself thinking I just want to go home… I wish I was in California… I can’t wait until we go home! All of a sudden I stopped to think, besides family, what am I missing so much about California or “home”? Am I really going to be that much more content when we move back to the states? …

Tortilla Stack…A Delicious Crock Pot Recipe!

I have tried many new recipes since moving to Grenada, but I think the Tortilla Stack recipe has become one of our favorites! The process is a bit more time consuming than some throw-all-ingredients-into-crock-pot and turn it on to the correct heat and time recipes. However, it is so worth the extra time!!! It is like a Mexican lasagna, with stacked layers, that gives a delicious enchilada taste and a healthy option for dinner! Tortilla Stack is also a great recipe to use Bekah’s Whole Wheat Tortillas! Ok, let’s get to it!

Whether it is celebrating birthdays, anniversaries, the SF Giants beating the LA Dodgers or scoring a great grade on a test, celebrating another completed week of med school with a pancake breakfast or even celebrating 10 minute breaks from studying with playing a game of cards or catch; we have really learned this last year through medical school the importance of embracing each moment that we get together no matter how small. We take every chance we get to plan a memorable day trip, to make unforgettable memories or have a special ice cream sundae 🙂…

Feeling Inadequate

Do you feel inadequate or not good enough in your day-to-day life? So often, I feel like I am not adequate or not qualified to do things God may be calling me to do. I feel like I won’t be able to do something well enough or that someone else would do it better than me. My fear may deter me from following through and will usually result in missing out on an opportunity God had opened up for me. But if I step out in faith, I tend to find blessings that I never could have imagined.…
